Parmesan Red Skinned Potatoes

This is a good accompaniment to any entrée for your family. Grill your entrée while your potatoes are cooking. The recipe is very easy & requires very little work.

Nutritional Information Per Serving: 201 calories, 4 grams protein,  11 grams of fat,  25 grams of CHO,  3 grams dietary fiber,  93 mg sodium.

Preparation Time: 10 minutes  Cook Time: 35 minutes

Serves:  6


  • 2 pounds red skinned potatoes, quartered
  • ¼ cup olive oil
  • 1 ½ tsp Italian seasonings
  • 2 garlic cloves, minced or ¼ tsp minced garlic
  • 1/3 cup reduced-fat Parmesan cheese


Preheat oven to 400 degrees. Mix potatoes with all the seasonings except Parmesan cheese. Mix well. Then add cheese and mix. Spread potatoes in a 9 X 13 inch baking dish. Bake for about 35 minutes or until tender.
