High Power Carrot Bread with Flax, Walnuts & Wheat Germ

This is a great recipe makes a great Christmas gift for your family and friends.  The flaxseeds and walnuts are good sources of dietary fiber and omega 3 fatty acids. The wheat germ is a good source of vitamin E and folic acid. The carrots are a great source vitamin A and beta carotene. You can use this bread for breakfast and it can be topped with fresh fruit like pureed peaches, pureed strawberries.

 Nutritional Information Per Serving:  233 calories, 5 grams protein,  14 grams of fat,  25  grams of CHO,  3 grams dietary fiber,  182 mg sodium.

 Preparation Time: 15 minutes  Bake Time: 40  minutes   

Serves:  12 slices



  • ½ cup whole wheat flour
  • ¾  cup all-purpose flour
  • ¼ cup ground flaxseed
  • ¼ cup wheat germ
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • ¾ tsp baking powder
  • ¾ tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • ½  cup packed brown sugar
  • 1 tsp vanilla
  • ½ cup vegetable oil
  • 1 tbsp honey
  • 1 cup shredded carrots
  • ½ cup walnuts


Preheat oven to 350 degrees.  Spray an 8-inch loaf pan with cooking spray.  In large mixing bowl, combine dry ingredients – both flours, flaxseed, wheat germ, baking powder, baking soda, spices and salt.  In another bowl, whisk eggs with the brown sugar, honey and vanilla. Stir in oil, carrots and walnuts. Then, add dry ingredients slowly and stir until just moistened. Pour mixture into the loaf pan.  Bake for 40 minutes or until a toothpick inserted into the center comes out clean.  Cool for 10 minutes. Turn loaf onto a rack for further cooling.  To store and preserve moisture, wrap in plastic and refrigerate.
