- 1 medium Russet potato, thinly sliced (sweet potato)
Wash and slice unpeeled russet potatoes. A mandolin works best to get a uniform cut so that the potatoes brown evenly. Placed thin-sliced potatoes on a microwave-safe sheet. Flavor with your favorite seasonings. Microwave on high until brown, about 4-8 minutes. Cool and store in an airtight bag.
Rather than using a microwave you can also cook on parchment paper in a 350 degrees oven. Cook for 8 – 10 minutes or until crisp. Dust with cooking spray and add favorite seasoning.
